Ingredients
- 2 Tablespoons paprika
- 2 teaspoons ground thyme
- 1 teaspoon onion powder
- 3/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 skinless catfish fillets, about 6 oz each (can also use tilapia or flounder)
- 6 Tablespoons butter, unsalted and melted
- 1 lemon, cut into wedges to garnish

Preparation
Step 1
*In a small bowl, mix together the paprika, thyme, onion powder, garlic powder, salt, and pepper.
Heat a large cast iron skillet, over medium high heat until very hot.
Dip fish into melted butter, letting excess drip off, then dip into spice mixture to coat thoroughly. Cook fillets, turning only once about 3-4 per sides. (I put mine in the oven @ 300 for a few minutes too if my fillets are thicker than 6 oz. each and I have several batches to cook on the stove. Just to make sure they are cooked all the way.) Serve with lemon wedges on the sides.
