Pasta - Ravioli with Truffles

The result of this recipe is obviously highly dependant on the quality of the 'truffle'. During the different stages of the season the perfume of the truffles may change, though the result is always good. There are also recipes that ask for the use of potatoes instead of the ricotta- try both and decide which you like the best!

- 6 tablespoons of grated parmesan
- 2 small truffles
- salt and pepper
