Ingredients

  • 1 egg
  • 1 egg white
  • 1 1/4 c brown sugar
  • 1/4 c canola oil
  • 1 c flour
  • 1 t baking powder
  • 1/2 t salt
  • 2 c reduced fat granola with raisins
  • 1 c dried cranberries or cherries

Preparation

Step 1

In a large bowl, beat the egg, egg white, brown sugar and oil until blended. Combine the flour, baking powder and salt; gradually stir into sugar mixture just until blended. Stir in granola and cranberries. Batter will be thick.

Spread into a 9in pan coated with Pam. Bake at 350 for 25-30 min or until golden brown and set. Cool on a wire rack and cut into 12 pieces.
