Ingredients
- Brine for pork:
- Black peppercorns
- 3/4 cup kosher salt
- 1 /c cup brown sugar
- 2 serrano chiles, crushed
- 1 jalapeno thinly sliced
- 2 cups warm water
- pork shoulder
- To cook Pork in crock pot:
- 1 jalapeno, diced
- ginger sliced, about 4 inches
- 1 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1 cup brown sugar
- Pickled Carrots:
- carrots
- 1/2 cup white vinegar
- 1/2 c sugar
- 1/2 tsp kosher salt
- For Sammies:
- Bread
- cilantro
- cucumber

Preparation
Step 1
Brine pork over night.
Mix all crock pot ingredients in pot. Salt and pepper pork and nestle in liquid. Cook on low for 8 hours or high for 4-5. until pork is tender, turning once during cooking if desired. Shred meat save liquid.
For carrots: Marinate in mixture for at least 30 minutes. Drain well and refrigerate until ready to use.
Assemble Sandwich:
Slice baguettes or rolls in half lengthwise. Spread a thin layer of mayonnaise ( I like to spike mine with hot suace) on the bottom half, if you like add pate as well. Top with pork, cucumber, cilantro, and pickled carrots, and sliced jalapenos. Drizzle with reserved sauce. Close sandwich and enjoy!
