Ingredients

  • 6 large eggs, separated and room temperature
  • 1 cup butter
  • 9 oz bittersweet or semisweet chocolate
  • 1/2 cup sugar
  • 1/2 cup sugar again
  • 1 teaspoon vanilla
  • 1/4 teaspoon cream of tartar

Preparation

Step 1

Preheat oven 350*
Place rack in center of oven
Butter a 9" springform pan and line bottom with parchment paper

Separate the eggs. Melt butter with chocolate over double broiler.

Put egg yolks and sugar in mixing bowl and beat for 3 to 5 minutes until lemony and thick and falls into a ribbon. Beat in vanilla and chocolate mixture.

In another bowl, beat egg whites until foamy, then add cream of tartar and continue to beat until soft peaks form. Gradually add the other 1/2 cup of sugar until stiff peaks form. Fold a heaping spatula full of whites into the chocolate mixture, then fold remaining amount of whites until all gone.

Pour into pan and smooth off the top. Bake for 50 to 60 minutes until tester comes out clean. Remove from oven and place on wire rack and take a knife and separate the sides of the cake from the pan. When cool, serve with confectionary sugar and whipped cream.
