Ingredients
- 2-1/2 # cream cheese
- 1-1/2 c. sugar
- Pinch of salt
- 2 oz. cornstarch
- 5 eggs
- 2 egg yolks
- 4 oz. dark rum
- 1 16oz can Hershey’s chocolate syrup
- Graham cracker crust

Step 1
Using mixer or food processor, combine cream cheese, sugar, salt and cornstarch, scraping down sides of bowl well. Add eggs in 3 stages, mixing well after each addition and again scraping down sides of bowl.
Add rum and syrup. Grease a 9” spring form pan and line bottom only with graham cracker crust. Pour in batter and bake in water bath (place in larger pan and add boiling water halfway up) at 300 degrees until center of cheesecake is firm to the tough, 50-60 min.
