Ingredients

  • 7 cups water
  • 4 cups spelt flour
  • 4 cups white whole wheat flour
  • 6 cups AP flour
  • 4 Tb vital gluten
  • 2 Tb salt
  • 3 Tb yeast
  • 1-2 Tb fresh basil
  • 1 cup nut pieces

Preparation

Step 1

Mix ingredients in mixer. Put in loosely covered container at room temp for 3-4 hours. Put in frig for 7-14 days. On baking day remove a grapefruit sized piece of dough w/ heavily floured hands. Shape into a loaf, cover & let rest for 45-60 min. Slash, brush w/ cornstarch wash & bake at 450 degrees in steamed oven for 30 min.
