Ingredients
- 1 3/4 cups egg whites (approx 14 eggs)
- 1 1/2 cups light brown sugar, pressed through strainer to sift
- 1 1/2 tsp cream of tartar
- 1 cup sifted cake flour, sift again & again

Preparation
Step 1
Whip egg whites in bowl. Add sugar & cream of tartar whip until triple in volume. Add flour in 2-3 additions fold in carefully. Put in pastry bag & use to fill small pans using plain large tip. Bake at 350 degrees for 25 minutes. Cool upside down for 1 hour (small pans can cool on racks)
Top this cake w/ caramel glaze or hot fudge sauce.
