Ingredients
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- dash of pepper
- 1 1/2 pounds boneless skinless chicken breast, cut into 1 inch pieces
- 3 tablespoons butter or margarine
- 1 medium onion, sliced
- 3 celery ribs, sliced
- 2 medium potatoes, peeled and cut into 3/4 inch cubes
- 3 medium carrots, sliced 1/4 inch thick
- 1 cup chicken broth
- 1 tablespoon ketchup
- 1 tablespoon cornstarch
- 1/2 teaspoon dried thyme

Step 1
Combine flour, salt and pepper in a shallow bowl; coat chicken. In a large skillet, melt butter' brown chicken on all sides. Add onion and celery; cook for 3 minutes. Stir in potatoes and carrots. Combine broth, ketchup, cornstarch and thyme until smooth; stir into skillet. Bring to a boil. Reduce heat, cover and simmer for 15-20 minutes or until vegetables are tender.
