Ingredients
- 1/2 cup salad or olive oil
- 1/2 lbs. shelled and deveined shrimp
- 1/4 lb. bay scallops
- 6 boneless chicken breast halves
- 2 lbs. sliced onions
- 2 green peppers sliced
- 2 red peppers sliced
- 1 cup chicken broth
- 2/3 cup Italian plum tomatoes from 16 oz can
- 3 Tbsp. tomato paste
- 6 cloves finely chopped garlic1 1/4 teasp. salt
- 1/4 teasp. pepper
- 1/8 teasp. oregano

Preparation
Step 1
Heat oil in skillet. Saute shrimp and scallops until firm
Remove w/ slotted spoon.
Add chicken to skillet and cook
Remove and set aside.
Add onions and peppers to drippings DO NOT BROWN
Add remaining ingredients and juices from shell fish. Cut chicken into strips and add to sauce, then add fish before serving
