  • 8 oz dark chocolate, chopped
  • 1/2 tsp espresso powder
  • 4 lg egg yolks
  • 4 lg eggs
  • 2/3 cups sugar
  • 4 tsp flour

Step 1

Butter and flour 6 6 oz ramekins. In the top of a doubles boiler melt the butter and chocolate, then add the espresso powder. Cool slightly. Beat the eggs, yolks and sugar till light and fluffy. Reduce the speed and add the chocolate mixture until just combined.Add the flour. Divide the batter into the molds. Place them on cookie sheet. If you like you can cover at this point and refrigerate till you want to serve. Great make ahead dessert.
Preheat oven to 450*. Bake for just 10 minutes. Invert onto a plate and let them sit for 10 seconds and then it should lift of. Can sprinkle with frangelico or Starbucks liquor and serve with berries.
