Ingredients

  • 1 c. milk, room temp.
  • 6 lg. egg whites, room temp.
  • 2 t. vanilla
  • 2 1/4 c. cake flour
  • 1 1/4 c. sugar
  • 4 t. baking powder
  • 1 t. table salt
  • 12 T. unsalted butter, soft but still cool (1 1/2 sticks cut in cubes)

Preparation

Step 1

Grease and lightly flour 2-9" cake pans or 3-8" pans. Heat oven to 350.

Whisk milk, egg whites and vanilla. Set aside.

In mixer bowl, put flour, sugar, baking powder and salt, mix at low speed. Add in butter and beat on low until it looks like moist crumbs. Add in all but 1/2 c. of milk mixture to crumbs and beat on medium speed about 1 1/2 minutes, then add remaining milk mixture and beat 1 more minute, scraping sides as you mix.

Pour mix in prepared pans. Bake until toothpick in center comes out clean, 20-25 minutes. Rest cakes about 3 minutes, then remove from pans and cool completely before frosting.
