black bean and corn salsa

Ingredients
- 1 can yellow or white corn, drained (or if you have fresh, that is even better!)
- 1 can black beans, drained and rinsed
- 1 can RoTel diced tomatoes and green chilis
- 1 bunch cilantro, finely chopped
- 1/2 small red onion, finely chopped
- 2-3 green onions, finely sliced
- 1 red bell pepper, finely chopped
- 2-3 Tbsp lime juice
- 1 avocado, chopped (I didn't use an avocado only because I didn't have one on hand . . .)
- 1/2 tsp minced garlic
- small amount of jalapeno, depending on how hot you like it
- dash of cumin

Preparation
Step 1
Gently mix all together in a large bowl and serve (or, put it in the fridge for a couple of hours like I did . . . amazing!). We just ate this with tortilla chips with our dinner last night, but then today I put it on top of scrambled eggs and wrapped it in a tortilla and it was an awesome breakfast burrito! I have also heard of people using this as a topping for tacos . . . or, it is even yummy enough that you can just eat it right out of the bowl with a spoon! :)
