Jalapeno Popper Mushrooms

Ingredients
- 2 slices bacon
- 1 1/2 tsp. olive oil
- 8 mushrooms, stems removed and chopped
- 1 clove garlic, minced
- 1 jalapeno pepper, minced
- 1 3-oz. package cream cheese, softened
- 3 Tbs. Cheddar
- Salt and pepper to taste

Preparation
Step 1
Fry bacon until crisp. Drain, cool, and crumble.
Preheat oven to 350 degrees. Bake mushroom caps for around 10 minutes. Drain these upside down.
Heat olive oil. Saute mushroom stems, garlic, and jalapeno. Cook until mushrooms are softened, around 10 minutes. Transfer to bowl and stir in cream cheese, bacon, and Cheddar. Season with salt and pepper.
Spoon into mushroom caps and bake until cheese begins to brown (15-20 minutes).
