Celery Salad with Pecorino

Ingredients
- 12 thinly sliced celery ribs
- 1/2 C EVOO
- 1/4 C lemon juice
- 1 finely chopped shallot
- Kosher salt & ground pepper
- 4 oz piece of pecorino cheese

Cooking time 30mins
Preparation
Step 1
Fill med bowl with cold water & 2 C ice cubes. Add sliced celery & let soak for at least 10 min.
Meanwhile whisk olive oil with lemon juice. Stir in shallot & season with salt & pepper.
Drain celery & pat dry. Add to bowl with dressing & toss. Serve over torn red lettuce and top with shavings of Pecorino.
