Ingredients
- Wasabi Ketchup:
- 1/2 c Ketchup
- 2 Tbsp. soy sauce
- 1 Tbsp wasabi paste
- Burgers:
- 1/2 c. panko (or reg. dried breadcrumbs)
- 1/4 c. whole milk
- 1/2 lb. ground sirloin
- 1/2 lb. ground pork
- 1/4 tsp. fresh ground black pepper
- 1/4 c. finely chopped white onion
- 1/2 Tbsp. soy sauce
- 1/2 tsp. salt
- Sesame oil for coating hands (about 2 Tbsp)

Step 1
1. Make wasabi ketchup by whisking together all the ingredients in a bowl. Set aside.
2. Burgers: In a small bowl mix the panko and the milk and let sit about 5 minutes (until panko absorbs all the milk).
In a large bowl, combine all the rest of the ingredients except sesame oil and knead until it becomes sticky and binds together, then divide into 4 equal parts.
Lightly coat hands with sesame oil and roll each portion into a ball, then pat flat to form a 1/2" patty (don't mash hard). Press down to make an indentation in the center of the patty.
Preheat grill to medium and grill burgers until they're nicely browned, about 12 minutes, flipping twice. Let rest 2 minutes. Spoon wasabi ketchup over and serve on buns or on rice.
