Ingredients
- 2 lg eggs
- 4 frozen veggie burgers
- 1/2 cup plain Greek yogurt
- 1 sm clove garlic finely grated
- 1/4 tsp paprika
- 4 cups baby arugula
- 1/2 cup jarred sliced roasted red peppers
- 1 sm kirby cucumber thinly sliced
- 1 tbs extra virgin olive oil
- 1 tsp dried mint
- 1/4 cup crumbled feta cheese
- 4 lg whole wheat pitas

Preparation
Step 1
1. place the eggs in a sauce pan and cover with water by about an inch. Bring to high simmer over medium heat and cook for 1 minute. Cover, remove from heat and let sit for 12 minutes. Drain the eggs and rinse under cold water and peel and thinly slice.
2. Meanwhile cook the veggie burgers as directed. Whisk yogurt, garlic, paprika 2 tbs water and salt to taste in a . In a large bowl toss the arugula, roasted red peppers, cucumber,olive oil, mint, feta and salt to taste.
3. Cut 1 inch off top of pita to make an opening, stuff the top of the pita strip inside the pita to reinforce the bottom. Stuff each pita with a veggie burger, some arugula salad and a few slices of hard boiled egg, drizzle with yogurt dressing.
