Old-Fashioned Shortcake

Ingredients
- Filling:
- 625 ml all-purpose flour
- 50 ml sugar
- 20 ml baking powder
- grated orange rind
- 150 ml butter
- 250 ml sour cream
- 2 large eggs
- 5 ml vanilla extract
- 1 L prepared fruit (blueberries, strawberries, raspberries)
- 75 ml sugar
- 500 ml whipping cream
- 125 ml icing sugar

Step 1
In a medium bowl, combine sugar, baking powder, grated rind and flour. Cut in butter wih pastry blender until mixture is crumbly. In another bowl, combine sour cream, eggs and vanilla; with a fork, stir into flour mixture until just moistened (dough will be soft). Knead dough 10 times on a lightly floured board.
For individual shortcakes, roll dough into a 23 cm square; cut into 9 squares. Place on a lightly greased baking sheet and bake at 450F for 12 minutes or until golden.
For large shortcake: divide dough in half; place in 2 lightly greased 8" round pans; pat down. Bake for 18-20 minutes.
Fruit Filling: Stir sugar into fruit; whip cream with icing sugar. Slice warm shortcakes into 2 layers; spoon fruit and whipped cream between layers and on top.
