Ingredients
- 1 pork tenderloin (1 1/4 lb), trimmed
- 3/4 tsp ground black pepper
- 3/4 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp dried oregano
- 1/4 tsp kosher salt
- 1/8 tsp ground coriander
- 2 Tbsp canola oil

Preparation
Step 1
Cut pork tenderloin into 8 pieces. Flatten each piece with your fingers to a 1/2 inch thick medallion.
Combine remaining dry ingredients and rub onto both sides of each medallion. Brush each medallion with oil.
Grill, covered for approximately 2 minutes per side, or until internal temperature reaches 140. Allow meat to rest for at least 5 minutes before serving.
