Ingredients

  • For Vinaigrette:
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 Tbsp capers, drained
  • 1 Tbsp minced garlic
  • 1 tsp anchovy paste
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt and Pepper to taste
  • For the Salad:
  • 8 slices Italian Baguette, sliced 1 inch thick
  • 1 1/2 lb Sweet Italian sausages
  • 1 large red onion cut into 1/2 inch thick slices
  • 1/8 cup olive oil
  • 2 cloves garlic halved lengthwise
  • 6 cups Romaine lettuce, torn and rinsed well in salted water
  • Diced tomato
  • 1 1/2 cups diced fontina cheese

Preparation

Step 1

For the vinaigrette: Puree 1/4 cup oil and red wine vinegar, capers, garlic, anchovy paste, Dijon and oregano together in a mini food processor. Taste and season with salt and pepper.

For the salad: Brush onion slices, sausages and Italian bread slices with 1/8 cup olive oil. Grill sausages over medium heat, covered until lightly charred on all sides and internal temperature reaches 155. Remove sausages and let rest 5-10 minutes before slicing into 1 inch thick pieces. Add Onions and grill until beginning to soften, about 4-6 minutes per side. Lastly, grill Italian bread on both sides until lightly browned, about 2 minutes. Rub each side of the sliced, grilled bread with cut garlic.

Chop onions, and cube bread. Add onions, bread, and sausage to lettuce, cheese and tomatoes. Add vinaigrette and toss to combine
