Ben's Gefilte Fish

Ingredients
- 5 - 6 lbs. carp or mixed fish (ground or chopped)
- gives approx. 2 lbs clear meat
- 2 large onions
- 4 - 5 carrots, split into strips
- 3 small eggs
- Matzo meal
- salt and pepper

Step 1
Put fish in mixing bowl or pot just as making a meat loaf. Finely chop onions, add to fish. Add the ggs, salt and pepper to taste. Mix very well. Then add matza meal - enough to thicken fish so it could be molded into cakes. Roll fish in your hands, making round balls then flatten. Wet hands in cold water before making each piece. This prevents fish from sticking to your hands.
Put all bones in bottom of pot (including the head) in which the fish will be cooked. Put a layer of fish on top of the bones; then a layer of carrots on top of fish. Continue layering. Add seasoned water (salt and pepper) not to exceed half othe amount of fish in the pot. Bring to a boil, then close lid tightly and let cook for aabout two hours on a very small flame. It is not necessry to cook any longer than this.
