Ingredients

  • 1 lb ground chicken
  • 1/4 c chopped fresh parsley
  • 1/4 c chopped green onion
  • 2 T lemon juice
  • 1 t garlic powder
  • 1 t onion powder
  • 1 t salt, divided
  • 1 t ground black pepper, divided
  • 3 T olive oil, divided
  • 4 c small Ruby gold or red potatoes, halved
  • 1 (14 1/2 oz) can fire-roasted diced tomatoes
  • 1/4 c brown sugar and hickory flavored barbecue sauce
  • Shredded cheddar cheese

Preparation

Step 1

In a large bowl, combine chicken, parsley, green onion, lemon juice, garlic powder, onion powder, 1/2 t salt and 1/2 t pepper. Divide mixture into 4 equal portions and shape ea into a 4 in patty.

In a large skillet, heat 2 T olive oil over medium heat. Add patties; cover and cook for 6 min on each side or until browned (165F). Transfer chicken patties to a platter; set aside and keep warm.

In a large bowl, combine potatoes, 1 T olive oil, 1/2 t salt and 1/2 t pepper. Toss gently to coat. Add potatoes to pan and cook, covered, for 10 min or until potatoes are tender.

In a small saucepan, combine tomatoes and barbecue sauce, and bring to a boil. Spoon sauce over chicken patties and sprinkle w/Cheddar cheese and green onion. Serve w/potatoes.
