Ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 1 Tablespoon baking powder
  • 1/4 teaspoon salt .
  • 5 oz. cold butter cut up into small pieces [1 stick plus 2 TBSP.] OR grate butter into the flour mixture.
  • 6 to 7 oz. heavy cream [add the first 6 oz. and SLOWLY add additional
  • cream only if needed, to form the disc]
  • Flavoring (optional)

Step 1

1. In a large bowl, mix dry ingredients, cut in butter with a pastry blender until
you have a coarse meal.
2. Make a well in the center and pour in cream and flavoring. Toss together
until it will come into a ball. Do not over mix.
3. Using your cutting board pat into a circle one inch thick.
4. Cut into 6 or 8 wedges like a pie. Place the wedges on a parchment paper baking sheet, leaving space between wedges.
5. Brush top with an egg wash (half egg/ half water) and sprinkle a small
amount of sugar of the top of the sweet scone variety. Bake at 375 for
approximately 25 minutes or until golden brown.

Extra tips:
Can be in scoops or rolled out and cut with circle cutters like biscuits.
Any type of dried or fresh fruit can be added or nuts, chocolate chips, toffee chips-etc. The best time to add these would be just as you are tossing the mixture together before forming the disc.

For savory scones omit the sugar and use your choice of add-ins (fresh or
powdered garlic, cheese, chives, or dried herbs, bacon, etc.) These can be
shaped and frozen for later use. Thaw at room temp and bake as described.
