Ingredients

  • 2 tbsp. olive oil
  • 1 large onion
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 3 garlic cloves, minced
  • 1 pound green split peas
  • 10 cups water
  • 1 ham bone or ham hocks or ham seasoning meat
  • 2 medium potatoes, peeled and chopped I used 2 cans diced potatoes
  • 1 tsp. salt

Preparation

Step 1

1. Heat oil in large pot. Add onion, celery, carrots and garlic. Saute 5 minutes. Add split peas, water, ham bone or seasoning ham. Bring to a boil. reduce heat and simmer 1 hour. Add potatoes, simmer another 30 minutes.

2. Remove ham bone or ham seasoning meat, pull meat off bone, or chop and set aside. Discard bone.

3. Using an immersion blender, puree soup. Add meat and salt. serve with crushed pita or corn chips.
