Mushroom and Okra Curry

This simple but delicious curry is served with a fresh gingery mango relish!

Ingredients
- Mango relish:
- 4 garlic cloves, roughly chopped
- 1 inch piece of fresh ginger root, roughly chopped
- 1-2 fresh red chillies, seeded and chopped
- 3/4 cup cold water
- 1 Tbsp sunflower oil
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp ground cumin
- seeds from 2 green cardamom pods, ground
- pinch of ground turmeric
- 4oz can chopped tomatoes
- 1 lb/6 cups mushrooms, quartered if large
- 8 oa okra, trimmed and cut into 1/2inch slices
- 2 Tbsp chopped fresh coriander
- cooked basmati rice, to serve
- 1 large ripe mango, about 1 1/4lb
- 1 small garlic clove, crushed
- 1 onion, finely chopped
- 2 tsp grated fresh ginger root
- 1 fresh red chilli, seeded and finely chopped
- pinch of granulated sugar
- pinch of salt

Preparation
Step 1
1. First make the relish. Peel the mango and cut the flesh from the stone. Mash it in a bowl or pulse it in a good processor. Stir in the rest of the relish ingredients. Set aside.
2. Pur the garlic, ginger, chillies and 2 Tbsp of water into a blender and blend until smooth.
3. Heat oilin large pan. Add coriander and cumin seeds and let them sizzle for a few seconds. Add the ground cumin, cardamom and turmeric and cook for 1 mins. Add the paste from the blender, the tomatoes, the remaining water, the mushrooms and okra. Stir and bring to boil. Lower the heat, cover; simmer for 5 ins.
4. Uncover and cook for 10 mins more, until okra is tender. Stir in coriander and serve with relish and rice.
