Ingredients
- 1 C butter, softened
- 1 1/2 C Sugar
- 1 Egg
- 2 1/4 C Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 tsp Vanilla
- Zest of 2 Large Lemons
- Juice of one Large Lemon (about 1 TBS)
- 1/2 C Lemon Sugar (1/2 C Sugar and Zest of 1 Lemon)

Step 1
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
Cream butter and sugar until fluffy (about 3 minutes). Add eggs and mix until well combined. Stir in flour, powder, salt, vanilla, zest, and juice, Allow to SIT FOR 3 MINUTES for lemon flavor to develop.
Scoop by the TBS and roll into a ball. Roll in lemon sugar to coat. Lightly press down on baking sheet. Bake 10-12 minutes or until brown.
