Soup - Rich Tomato and Bread Soup

Tip – In the winter you can substitute the basil with sage. It is also 'buonissimo' like this!!.

Ingredients
- gr.300 stale bread ( Tuscan if possible!)
- gr.500 peeled tomatoes
- 1 glass of olive oil
- 12 basil leaves
- 2 cloves of garlic
- 1 leek
- 1/2 lt.beef broth
- 2 pinches of salt
- 1 pinch of pepper

Step 1
In an aluminium saucepan heat the oil & add the garlic ( crushed with the back of a knife). Cut the leek finely , add to the oil & brown slightly.Add the tomatoes cut into pieces ,also the basil & cook for 10 minutes. Salt & pepper to tasteand add the meat broth ( already hot) . When it boils add the bread that has been cut into thin slices.
Alow to cook for 10 mins on a medium flam3, stirring constantly, then turn off the flame and cover.
After an hour stir well to break up the bread slices, reheat for 3-5 minutes and serve hot with a dash of olive oil.
Never serve with parmesan!!!
