GRANDMA JEAN’S LEMON BARS

These are best and less sweet without frosting. I just sprinkle with powdered sugar, as does Jean. Very very good bars.

Ingredients
- CRUST:
- 1 cup flour
- 1/2 cup butter
- 1/4 cup powdered sugar
- FILLING:
- 2 beaten eggs
- 1/2 cup coconut
- 1 cup sugar
- 1/2 teaspoon baking powder
- 3 tablespoons flour
- 3 tablespoons lemon juice
- 1 grated lemon rind
- FROSTING:
- 1/2 cup butter
- 1 cup powdered sugar

Preparation
Step 1
Pat crust into 9 x 9” pan and bake in a 350 degree oven for 20 minutes.
Mix filling ingredients.
Pour over baked crust.
Bake 25 minutes in a 350 degree oven.
Cool and frost (optional).
Frosting: Cream and beat frosting ingredients for 8 minutes, no less.
Add 3 tablespoons cold water, one at a time, 3 tablespoons hot water, one at a time.
Beat well and frost cooled bars.
