Ingredients

  • 2 lbs. Flounder or Fluke
  • 1/4 cup salad oil
  • 1 cup chopped onion
  • 1/3 cup chopped green pepper
  • 1 Tbsp. flour
  • 1/2 cup clam juice
  • 1/2 cup tomato juice
  • 2 dashes tobbasco sauce or crushed red pepper
  • 2 Tbsp. capers (optional)
  • 1 teasp. worsteshire sauce
  • 1 teasp. salt
  • 1/2 teasp. pepper

Preparation

Step 1

Saute, onion green pepper in oil for 5 mins. Stir in flour.
Then add clam juice, tomato juice, worsteshire sauce, salt and pepper. Add capers (optional) Cook until a little thick.

Lay flounder pieces in individual foil and spoon mixture over fish. Wrap drugstore style and put on sheet pan. Cook 40 mins. @ 350 degrees
