Ingredients

  • 1 cup butter
  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 4 eggs
  • 4 tablespoons flour
  • 2 cups granulated sugar
  • 4 tablespoons lemon juice
  • 1/2 teaspoon lemon rind
  • Additional powdered sugar to dust

Preparation

Step 1

Cut together first 4 ingredients as for a pie crust. Pat into 9x13 inch pan. Bake at 350 degrees for 15 minutes. Beat the 4 eggs slightly. Combine the additional flour, sugar, lemon juice and lemon rind; add to the eggs. Pour over the baked crust. Bake at 350 degrees for 20-25 minutes. Dust with powdered sugar while hot.
