Ingredients

  • 1 c couscous
  • 1/2 c raisins (optional)
  • 14 oz Garbanzo Beans (chick peas)
  • 1 pkg smoked ham, julienned (optional)
  • 1/4 c fresh parsley, chopped
  • 5 green onions, chopped
  • 1 tomato, diced
  • 1 red pepper, diced
  • 1 small zucchini, diced
  • 1/4 c Feta Cheese
  • DRESSING
  • 1/2 c olive oil
  • 1/4 c lemon juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 3/4 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 tsp hot pepper sauce

Preparation

Step 1

1. In saucepan, bring 1 1/4 cups water to boil, stir in couscous and raisins. Cover and remove from heat; let stand 5 minutes. Fluff with fork.

2. In large bowl, combine couscous mixture, garbanzo beans, ham, parsley, onions, tomatoes, red pepper and zucchini.

3. Whisk together oil, lemon juice, garlic, salt, cumin, turmeric and hot pepper sauce; toss with salad until combined. Sprinkle with feta cheese before serving.
