- 6 cups water
- 1 cup rye flour
- 1 cup whole wheat flour
- 11 cups AP flour
- 3 Tb coconut oil
- 3 Tb salt
- 3 Tb yeast
- 3 Tb sugar
- 2 Tb herbs

Step 1
Mix ingredients w/ Kitchenaid mixer. Put dough into a loosely covered container. Let sit at room temp for 3-4 hours. Put in refrig for 7-14 days. On baking day w/ heavily floured hands remove grapefruit sized piece of dough. Shape into loaf, let rest for 40 min. Slash, brush w/ cornstarch wash & top w/ herbs or seeds. Bake in steamed oven at 450 degrees for 35 minutes.
