  • 1 tbls veg oil
  • 1/2 cup onion, chopped
  • 2 carrots, chopped
  • 1 cup quinoa
  • 2 cups veg broth
  • 2/3 cups chopped walnuts (optional)
  • 1/4 cup chopped parsley

Preparation

Step 1

Heat oil in a saucepan over medium to high heat.

Cook onion in oil for about 5 minutes until translucent.

Add carrot and cook 3 minutes.

stir in quinoa and vegetable broth, bring to a boil. Reduce to simmer, cover and cook 15 - 20 minutes or until quinoa is tender and fluffy.

In a bowl toss quinoa together with optional walnuts and parsley.

Serve hot or at room temperature.
