Ingredients

  • 1 Tbsp cooking oil
  • 2 small carrots, chopped
  • 1 small onion, chopped
  • 4 c chicken broth or stock
  • 2 small potatoes, cut into 1/2" cubes
  • 1 c fresh spinach, torn
  • 1 tsp lemon juice
  • 1 card cooked egg, sliced (optional)
  • paprika (optional)

Preparation

Step 1

1. In a large saucepan, heat the oil over med-high heat. Add carrots and onions. Cook and stir until tender. Add broth and potatoes. Bring to a boil, reduce heat and simmer, covered, about 10 minutes or until potatoes are tender. Stir in spinach and lemon juice.

2. To serve, ladle in bowls. Garnish each serving with some sliced egg then sprinkle with paprika.

Makes 4 side dish servings.
