Ingredients

  • Vinaigrette Dressing:
  • 1 cup Soft White Wheat Berries cooked
  • 1 cup White or Navy Beans cooked
  • 1/2 cup Green Onion chopped
  • 1/2 cup Celery sliced
  • 1/2 cup Tomato diced
  • 1/2 cup Olive Oil
  • 2 Tbsp Lemon or Lime Juice
  • 2 Tbsp White Wine Vinegar
  • 2 Tbsp Parsley chopped
  • 1 Tbsp Honey Mustard
  • 2 Tbsp Shallot minced
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper (Medium Grind)
  • To Cook Wheat berries-Soft White Wheat:
  • 1 3/4 cups water
  • 1/2 cup rinsed soft white wheat berries
  • 1/4 tsp salt

WHEAT BERRY & WHITE BEAN SALAD (USING SOFT WHITE WHEAT)

Directions

Mix the vinaigrette by combining all the ingredients with a whisk or blender. Add the salad ingredients and mix well. Let chill overnight or for several hours to let the flavors blend. Serve chilled on a bed of leaf lettuce.
