Ingredients
- Vinaigrette Dressing:
- 1 cup Soft White Wheat Berries cooked
- 1 cup White or Navy Beans cooked
- 1/2 cup Green Onion chopped
- 1/2 cup Celery sliced
- 1/2 cup Tomato diced
- 1/2 cup Olive Oil
- 2 Tbsp Lemon or Lime Juice
- 2 Tbsp White Wine Vinegar
- 2 Tbsp Parsley chopped
- 1 Tbsp Honey Mustard
- 2 Tbsp Shallot minced
- 1/4 tsp Sea Salt
- 1/4 tsp Black Pepper (Medium Grind)
- To Cook Wheat berries-Soft White Wheat:
- 1 3/4 cups water
- 1/2 cup rinsed soft white wheat berries
- 1/4 tsp salt

WHEAT BERRY & WHITE BEAN SALAD (USING SOFT WHITE WHEAT)
Directions
Mix the vinaigrette by combining all the ingredients with a whisk or blender. Add the salad ingredients and mix well. Let chill overnight or for several hours to let the flavors blend. Serve chilled on a bed of leaf lettuce.

Directions for cooking soft white wheat berries:
