Ingredients
- 1/2 c. sugar
- 2 tbsp. flour
- 1 c. unsweet pineapple juice
- 1 tbsp. butter
- 1 egg, lightly beaten
- 1 c. heavy whipping cream, whipped
- assorted fresh fruit

Preparation
Step 1
In a small saucepan, combine the sugar and flour. Gradually whisk in pineapple juice. Add the butter. Cook and stir till butter is melted and mix comes to boil. Cook and stir for 1-2 mins. or till thickened.
Remove from heat. Stir in small amount of hot mixture into egg; return all to pan, stirring constantly. Bring to gentle boil; cook and stir for 1 min. Remove from the heat. Cool to room temp, stirring several times.
Fold in whipped cream. Cover and refrigerate for at least 1 hour. Serve with fruit.
