  • 4 boneless chicken breasts, cooked and chopped
  • 1/2 medium onion, chopped
  • 1 green apple
  • 2 stalks celery, chopped
  • 1/4 cup raisins
  • 1 cup low fat mayo
  • 1/2 cup mango chutney (or chopped fresh pineapple)
  • 3 T curry powder, or to taste
  • 1 T lemon juice
  • 1/2 t salt
  • 2 T chopped fresh parsley
  • Garnish: (optional)
  • Lettuce, pineapple, peanuts, chopped scallions, coconut
