Great way to use leftover roasted chicken, especially yum at sea.

Ingredients
- 4 boneless chicken breasts, cooked and chopped
- 1/2 medium onion, chopped
- 1 green apple
- 2 stalks celery, chopped
- 1/4 cup raisins
- 1 cup low fat mayo
- 1/2 cup mango chutney (or chopped fresh pineapple)
- 3 T curry powder, or to taste
- 1 T lemon juice
- 1/2 t salt
- 2 T chopped fresh parsley
- Garnish: (optional)
- Lettuce, pineapple, peanuts, chopped scallions, coconut

Mix all, chill to let flavors blend. Great as a wrap or on lettuce leaf. Garnish is totally optional.
