Chocolate Pillow Cookies

These are from Jeff's Mom, who got it from a Pillsbury Bakeoff cookbook. These are a favorite by all and lots of family memories have been made making these cookies. Guests always like them because they are so unusual and still meet the chocolate requirement! A couple baking tips: use butter, not margarine (works better in the press); and do not refrigerate dough before pressing.

Ingredients

  • 1 cup butter (2 c.)
  • 3/4 cup sugar (1.5 c)(12.3 oz)
  • 1 egg (2)
  • 2 teaspoons vanilla (4)
  • 2 1/2 cups flour (5 c) (24.9oz)
  • 1/2 teaspoon salt (1 tsp)
  • 10 Hershey's Candy bars (1.45 ounce size)
  • colored sugar for sprinkling

Preparation

Step 1

Cream butter and sugar. Add egg and vanilla. Stir in dry ingredients. Press dough through a cookie press, using sawtooth plate, into strips onto ungreased cookie sheet. Break candy bars into 1" pieces; place 1/4-inch apart on strips of dough. Press another strip of dough over candy bars, covering completely. Sprinkle with colored sugar. Bake at 375 degrees for 12-15 minutes, or until light golden brown. Immediately cut baked dough into pieces using a spatula.
