Ingredients

  • 1 cup oats
  • 1 cup nuts, chopped, any varieties
  • 1/4 cup (8 Tb) flax seed
  • 1/4 cup mixed seeds (ie. pumpkin, sesame, sunflower etc.)
  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 cup oil
  • 2 cups dark brown sugar
  • 4 lg eggs
  • 4 tsp vanilla
  • 2 cups dried fruit

Preparation

Step 1

In a 350 degree oven toast oats, seeds & nuts, stir 1-2 times for 10 minutes. Cool.
Combine flour, baking powder, salt & cinnamon.
Combine oil & brown sugar, mix until smooth.add eggs 1 at a time, mixing after each. Add vanilla. Stir in dry ingredients until just combined. Stir in oats, nuts & seed until well combined. Stirin dried fruit. Line 2 lg baking sheets w/ foil carefully tucked in corners & extending approx 1" over the edges of pan. Bake at 350 degrees for 20-25 minutes(until just set). Cool, lift foil out & place bars on board. Cut each pan into 32 bars.
