Ingredients
- 1 cup cake flour, sifted before measuring then sifted a couple more times
- 3/4 cups superfine sugar sifted 4 times
- 1 3/4 cup egg whites (approx 14 eggs)
- 1 Tb warm water
- 1/2 tsp salt
- 1 1/2 tsp cream of tartar
- 2 tsp vanilla

Preparation
Step 1
Add water to egg whites & whip until foamy. Add salt & cream o tartar continue whipping add vanilla whip until glossy, add sugar, whip until glossy, shiny & smooth. Fold in flour in 6 additions, carefully. Put in pan run sharp knife through, smooth top w/spatula. Bake at 350 degrees for 35-40 min. For 9" angel food cake pan 25 min for small cake pans. Cool upside down for 1 hour or on rack for small pans.
Top this cake w/ pink glaze or coconut cloud frosting.
