Pizza Margherita

This classic pizza is simple to prepare. The sweet flavour of sun-ripe tomatoes works wonderfully with the basil and mozzarella.

Ingredients
- 1 pizza base, about 10-12 inch in diameter
- 2 Tbsp olive oil
- 1 1/2 cups tomato sauce
- 5 oz mozzarella cheese
- 2 ripe tomatoes, thinly sliced
- 6-8 fresh basil leaves
- 2 Tbsp freshly grated parmesan cheese
- ground black pepper

Preparation
Step 1
1. Preheat the oven to 425*. Place pizza dough on cookie sheet. Brush with 1 Tbsp olive oil, then spread tomato sauce evenly on top leaving 1/2 inch border.
2. Cut mozzarella into thin slices, and arrange the slices on top of pizza dough, alternating them with overlapping slices of tomato.
3. Tear the basil leaves into large pieces and scatter them over the pizza. Sprinkle with the parmesan. Drizzle over the remaining oil and season with pepper. Bake for 15-20 mins, until crisp and golden. Serve immediately.
