Ingredients
- 800 grams of veil or beef ( muscle, tendon )
- bone with marrow
- 3 lt of water
- 1 stalk of celery
- 1 red onion
- 1 medium carrot
- 3 bay leaves
- 1 clove
- 5 tablespoons of olive oil
- salt
- 10 black pepper corns, smashed

Preparation
Step 1
Chop the vegetables into large pieces and carmelize (cook with a high flame) in a large pan with the 5 tablespoons of olive oil for 5 minutes. Add the bay leaves, clove, 2 pinches of salt, pepper corns (smashed) and the bone. Stir often. Cook for an additional 5 minutes. Add the water. Cover and bring to a boil. Boil for 10 minutes. Add the different meats. Cover. Cook over a low flame for an additional 1 ½ hours.
Remove from the fire and let it set for 30 minutes.
Serve warm with green salsa.
