Ingredients

  • 1 8 1/4 oz jar mole sauce (such as, Dona Maria)
  • 3 mole jars full of no sodium chicken broth (approx 25 oz)
  • 1 pound frozen chicken tenders
  • Cooked white rice
  • Garnish with: toasted pepitas and crumbled cojita cheese (if desired)

Step 1

Directions:

Blend mole sauce with chicken broth. (You will only use half of this sauce.
Freeze the other half, for later) Put chicken in pressure cooker, pour sauce
over, and cook for approx 20 minutes. Release pressure quickly. Simmer,
uncovered, to reduce mole sauce. Serve over rice, and garnish with pepitas and
cojita cheese, if desired. You could also use the chicken in tacos, or enchiladas
(pouring the sauce over, in which case, don't reduce the sauce...it will thicken,
upon baking)
