Gigi's Doughnuts*****

Ingredients
- 1 1/2 cups whole milk
- 1 stick butter
- 2 eggs
- 2 tsp salt
- 2/3 cup sugar
- 2 T yeast
- 6 cups flour(more as needed)
- oil for frying
- sugar
- 10 x sugar
- butter
- vanilla
- milk chocolate chips
- toasted coconut
- jimmis
- raspberry preserves
- we like sugar coating, buttercream frosting or chocolate frosting...then add coconut, jimmis or preserves!

Preparation
Step 1
*these directions are for my bread machine
-Heat milk and butter in microwave for 2 min.
-Pour milk mixture into machine and add salt, sugar and eggs.
-Measure 3 cups of flour into machine... start machine on "dough only" cycle.
-Add yeast...as yeast and flour get incorporated, continue to add additional flour as needed.
*The dough cycle takes about 1 1/2 ho urs to complete.
-Pour dough out onto counter, dough will deflate, cut into three portions for easy handling.
-Working with one portion, place the other two in a greased bowl covered with a towel.
-Roll dough out to a 3/4" thickness.
-Using a doughnut cutter, cut out doughnuts and lots of extra holes.
-Cover with "Pam Sprayed Saran" and let rise until doubled...about 30-40 min.
-Heat oil to about 350*
-Fry doughnuts quickly on both sides.
-Drain on newspaper and paper towels.
TIPS
-sugar doughnuts must be rolled hot
-ganache and thin glaze can done while hot
-let doughnuts cool for frosting, dip into toppings while frosting is still soft
-dough can be kept in frig before shaping
-cut doughnuts can be flash frozen and then stored in containers or bags...bring to room temperature and let double before frying
