Skillet Hashbrowns with Eggs and Bacon 0 Picture

Ingredients

  • 4-6 strips thick bacon
  • 2 Russet potatoes, peeled and diced
  • 1/4 C chopped scallions
  • S & P to taste
  • 1-2 TBS unsalted butter
  • 4 eggs

Preparation

Step 1

Cook bacon in heavy skillet. Remove from pan and drain on paper towels.

Reserve 1/4 C drippings.

Heat 2 TBS drippings in pan over med-high. Add potatoes but DO NOT STIR. Saute potatoes until begin to turn golden brown, 5-7 minutes.

Stir potatoes and drizzle remaining drippings. Fry until brown. 7-10 min, stir occasionally.

Add scallions and S & P. Remove from skillet and keep warm.

Wipe skillet clean. Add butter and eggs. Cook as desired, over-easy, scrambled.

Serve with bacon and hash browns.
