Spicy Spanish Pork Loin Recipe - Lomo Adobado 0 Picture

  • 1 Tbsp sweet Spanish paprika
  • 4 cloves garlic
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 4 oz white wine
  • 3 Tbsp olive oil
  • 2 lbs pork loin, cut into 8 thin slices
  • 3-4 Tbsp olive oil for frying

Preparation

Step 1

Peel and finely mince garlic (or press in garlic press). Mix minced garlic with oregano, salt, white wine and olive oil in a glass baking dish. Place pork loin slices into baking dish and spread spice mixture on both sides.

Cover pork with plastic wrap and marinate in refrigerator for at least 1 hour, preferably overnight.

To cook, pour 3-4 Tbsp olive oil into a large frying pan and heat on medium. When hot, fry loin slices in pan. Remove and serve with rustic bread and roasted piquillo peppers.
