Ingredients
- Crust:
- 2 1/4 c. crushed chocolate wafer cookies
- 1/4 c. sugar
- 1/2 c. butter melted
- 1 egg white lightly beaten
- Filling:
- 2 cream cheese softened
- 1 c. sugar
- 2 tsp. strawberry extract
- 2 eggs
- 1/2 c. sour cream
- 2 Tbsp. flour
- 1/2 tsp. red food coloring
- Garnish:
- Whipped cream and strawberry heart cutouts

Preparation
Step 1
Crust:
Heat oven to 350. In small bowl combine crushed cookies, sugar, melted butter and egg white stirring well. Press mixture into bottom and half way up sides of 24 (2") miniature cheesecake pans. Bake for 8 min.
Filling:
In large bowl beat cream cheese, sugar and strawberry extract at medium speed until creamy. Add eggs one at a time, beating well after each addition. Stir in sour cream, flour and if desired, food coloring.
Spoon batter into prepared crusts and bake for 16-18 min or until centers are set. Cool completely. Store, covered, in fridge up to 3 days. Garnish with whipped cream and strawberry heart cutouts if desired.
