Ingredients
- Vegetables:
- 1 Lg bottle V8
- 1 8oz can tomato sauce
- 1 Sm can tomato paste
- 1 can stewed tomatoes (garlic seasoned is optional)
- 1/2 head cabbage (chopped)
- 1 Stalk celery (hearts are best)
- 1 Lg yellow onion
- 3 cloves garlic
- 2 Bay Leaves
- 1 Tsp Oregano
- 2 Tsp ground Pepper (garlic or lemon pepper is an option)
- 1 Tbsp Salt or Mrs Dash
- 1 C Instant Rice or Sm Pasta (Orzo or baby shells are good)
- Your choice, everybody has favorites. I use carrots, squash, green beans, mushrooms , red potatoes

Preparation
Step 1
Cut up onions, celery, carrots, garlic and saute in 1-2 Tbsp EVOO or canola oil.
Add spices and continue cooking. Add can of tomato past and blend.
Add vegetables in order starting with the ones that take longer to cook.
Add tomato sauce, stewed tomatoes, V8 and 1 C Water.
Let cook for about 1 hour and then add rice or pasta.
Continue to simmer for about another hour.
May be thick, so you my want to add more water until you reach desired consistency.
Variations: Spicy V8 or add white or black beans.
