Ingredients

  • 3 tablespoons cornstarch
  • 1 cup plue 2 tablespoons sugar
  • 1 cup boiling water
  • 4 egg yolks
  • 2 tablespoons margarine, melted
  • 5 tablespoons lemon juice
  • pinch of salt

Preparation

Step 1

Stir together in a pan over low heat, the cornstarch, sugar and boiling water. Stir until smooth.

Combine the egg yolks, margarine, lemon juice and salt.

Add the egg yolk mixture to the corn starch mixture.

Stir together over medium heat until thick. Will stick and burn if the heat is too high.

Put into baked pie shell and top with meringue if desired.
