  • Approximately 1 pound tomatoes (2 large)
  • 1 large onion, unpeeled
  • 6 garlic cloves, unpeeled
  • 1 cup chopped fresh basil
  • 1 tsp minced garlic
  • Salt

Step 1

Preheat the oven to 350 F.

Slice the tomatoes into 1/4-inch slices. Bake on a parchment-lined baking sheet for 30 to 45 minutes, or until the tomatoes lose their sheen and begin to shrivel. Bake the whole unpeeled onion on a nonstick baking sheet at the same time about 45 minutes, or until the onion is tender to a knife. Add the garlic cloves to the baking pan with the onion after 10 minutes.

Peel the baked onion and chop roughly with the baked tomatoes. In a medium nonstick saute pan, combine the onions and tomatoes. Squeeze the garlic pulp from each clove into the onion-tomato mix and simmer, uncovered, for 10 minutes. Add the basil and raw minced garlic and blend. Add salt to taste and serve warm or at room temperature.
